Meyer Lemons

Few days ago, my neighbor R, across the street gave me 3 beautiful Meyer lemons she got from her son's backyard in California. I LOVE Meyer lemons. They are so different from from the store bought lemons! With true yellow in color, extremely thin skin, they smell so refreshing --- great way to bring some color and light in this gray weather of Oregon ;)

Anyway, I have been looking among blogs to search for some ways to use these beauty up. I am the type of person who likes to collect recipe books...but after blogging and blog-hopping around, I have found some really really cool blogs that have great photos of the food, and recipes (refer to my side bar for some of those blogs sites). I narrow down to two blogs that had a Meyer Lemon souffle recipes --- Aran's and Helen's. These are two amazing ladies...visit their blogs and you'll understand what I'm saying. I went with Helen's recipe since I have all the ingredients needed.

I was really excited, cos' it's my first time making souffles. I've heard so many stories about collapsed souffles. So, when I see them rising in the oven, I was very pleased. I remembered not to open the oven door, as I have read it some where, even though I was tempted to rotate the tray.

When it was done, the smell was just wonderful! I also made a raspberry sauce to go with it. I love sauces, and I had a packet of frozen raspberries in the freezer. Dump the whole bag in a small pot, cook it until they are soft and liquidy, add a couple of tablespoons of sugar (to your taste), then strain it through a fine sieve and let it cool. Then I thought about my dear friend, Diana the Smartie Pants. She was the first to respones to my previous post. I called her up to deliver her "made by me prize!!!" I hope she likes it as much as I do. =) I'm hoping to make some more tomorrow, so I can bring some to share with my neighbor, R and J. I LOVE YOU MEYER LEMONS!!! ;)

They are SO FRAGRANT, I tell ya!

by the time I took the photos, they have already collapsed a little.

I didn't wrap the paper around the remekins, so they didn't rise like those in Helen's photo.

Well done on the souffles! I just love Meyer lemons too! Oh, I don't wrap my ramequins with paper either. I really depends on the how much the meringue has already deflated when you go bake them. Some rise super high, some medium. In any case, bravo!

Those souffles were soooo yummy!!! I have never had one before and was glad I won the prize. The raspberry sauce was so perfect with the lemon flavor. JenE my dear you are an awesome chef!!!! I highly recommend the recipe JenE used, you will not be disappointed!!!
